Unlike hardened block jaggery, Dhep is set soft and semi-solid, capturing the fudge-like texture and fuller molasses flavour of freshly boiled cane juice. Clarified using food-grade lime and dried without sulphur or artificial bleaching, it retains more natural moisture along with iron, potassium, calcium, and magnesium — making it a favourite for direct eating and traditional sweets.
